We went with the 9-course regular menu and the 9-course vegetarian autumn collection, plus the grand wine pairing. The pairings were spot on; some combinations really lifted both the food and the wine—just perfect. For me, the caviar round, tortellini, gazpacho, and wagyu were mind-blowing.
