Seeing the same staff visit after visit indicates a well-run establishment. For example, my wife prefers a slight variation on her mixed drink and most wait staff know exactly what it is. Adequate wine list goes well with the menu. Just enough items on the menu, plus one or two appetizer and entree specials, without being unwieldy. I think they do fish especially well.
