Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Chef-owned and operated for more than two decades, 315 is dedicated to serving both modern and contemporary French cuisine inspired by seasonal local ingredients. With a grassroots initiative, almost every dish is prepared from scratch using exceptional care in the procurement of every ingredient. In this way, we pay respect to the community by finding new ways to support Santa Fe’s unique culture of food and art. French food is much more than the classic dishes we all have learned to know and love. It is a philosophy within its composition and a discipline in its technique. Using carefully selected ingredients, we look for ways to enhance a dish rather than overwhelm it. This is where the dance begins between the food and the wine.

It was a beautiful, Fall Santa Fe Saturday light breeze but not my cool. Sitting in the patio was very delightful. Service was good though not over powering. Our meals were excellent. There were only a few other tables occupied so noise level was very low. Overall, a very nice lunch - we will definitely return.

We really like LaBoca so it is always one of our "Go-to" restaurants when visiting Santa Fe. The food selection and tastiness is always good, and it is fun to have tapas, and then if still a little hungry, order another. The vibe is casual and enjoyable, there is lots of lively conversation and this last time we had people from the UK sitting at the tables on either side of us. They didn't know one another, but seemed to be having a grand time visiting the U.S.

Food was interesting and full of flavor. They brought out 5 different moles to try. Chocolaty to very very spicy. The Sopa du Amor was blue crab with a Creamy mole' sauce with cream fresch and cinamon. First serving cold so asked to heat. They brought an entire new bowl. Most of the food was too spicy for me, but finally settled on shrimp enchiladas with a mild mole' sauce and the enchilada was made reconstructed and very tasty. The lamb chops were cooked to perfection. The ambiance of this restaurant was cozy and beautiful. The staff phenomenal.

Our server, Judith, was wonderful. Very attentive. The food was overall good. I had the sea bass and it was delicious! My husband had the filet and enchiladas. Unfortunately the filet was overcooked, but the enchiladas were delicious. Great setting!

First, our waiter was amazing. One of the best we have ever had. Really explained not only the food, but also the chef’s philosophy to include it on the menu and his own personal “take” on vintage recipes to make them fresh and delicious. He was so personable and really made our evening special. The cocktails were inventive (but not to “avant- guard”. Very delicious and the presentation was beautiful. The food was fabulous. Everything on our plates was consistently so good. Again, beautifully presented and extremely delicious. We had the scallops which were so citrusy and flavorful. The sea bass with the mole, again, so exciting to our taste buds. The pork tomahawk was tender and juicy and so well seasoned but not over powering. The elk tenderloin melted in your mouth. So scrumptious. One of the best restaurants we have been to in a long time!
