Traveled the world and have had some amazing meals in Barcelona, Denmark, NYC, Philadelphia, Japan, and LA and from Iron Chefs, Michelin stars, etc.. However, The experience at Wye Oak Tavern was in the top five for me over 30 years of being a travel/foodie and easily compares to some of those other amazing meals. This includes eating at Volt too, which I always thought was good, but a little over the top with respect to value. I guess I am not moved by doing crazy stuff with dry ice and then charging $100+ for it. Just give me best food in the $30-$70 range, and that is what Wye Oak has done. It also honors Maryland with a dish like the rockfish cioppino and honors the former Visitation Academy with the Apple Dumpling Desert. So ambiance, the respect is all there for the past while moving into the future. I felt every dish that was created was what the brothers found to be the best version of that dish, in their eyes/taste buds (and mine too). What that means is taking something simple like steak tartare or brussel sprouts trying like 100 different flavor combinations and texture combinations and then end up with what I consider to be the best version of brussels or steak tartare I have ever had. Sometimes this was subtle: a certain spice added to change it up in a good way. Change the length of cooking or sear so a slight char was present, or in the case of the apple dumpling dessert add a little crumble on the side/top for texture. This was present in all the dishes we tried - pate, surryano ham, tartare, rockfish cioppino, and nice 16 oz steak. Again, the brussels amazing and the marconi side was impeccable. Aerated fontina cheese? Just awesome. Add in amazing service (bartender and servers), great drinks, a wondering sommelier who helped my wife pick a nice cab. Just a great night.
