It's always interesting to find out what our server is planning to do once they leave the CIA. Having all students wait on tables is such an important part of anyone's culinary education. Cudos! I would be so pleased if that level of service was the norm at every restaurant. All of the CIA's restaurants are great! Walk around and enjoy the experience. Visit the book store. The zuppa di pesce was a delight; the fish were all very fresh and tasty and the soup was the perfect compliment. The scallops were outstanding also - just like eating on Cape Cod. Dessert was the tiramisu which was a nice light ending to the meal. Drinks were fantastic (lots of locally-sourced Hudson Valley inspired cocktails). Food was also amazing. Came to here to catch up with some girlfriends, we shared a bunch of appetizer dishes (the short rib flatbread was amazing!). Only semi-complaint was that service was a little slow, but to be fair, it was only the one bartender taking care of our large table and the bar (and he was excellent!). Learned so much on the tour--tasting sample to learn about flavors was fun. Enjoyed the history and what's behind CIA. A definite must do if visiting CIA.
