The creative new American cuisine at Stack includes an excellent starter of wings with signature sauce and blue cheese. Wings are one of numerous small plates on Stack’s dinner menu. Others include pigs in a blanket, shellfish stacks, spicy crab and a charcuterie plate. Entrees are split into “classics,” such as a burger, rack of lamb and surf and turf for two; “land,” including several steaks and a kurobuta pork chop; and “sea,” with scallops, seabass, stuffed Maine lobster and more. A highlight among the side dishes – one that could turn a plate of wings into a full meal – is the adult tater tots stuffed with brie and bacon. Note Stack’s striking mahogany walls, which are crafted to resemble the geological layers of a canyon.

Holsteins is on the second level of The Cosmopolitan of Las Vegas’ Boulevard Tower – just look for its neon pink life-size cows. The restaurant specializes in big, hand-crafted burgers loaded with gourmet toppings. Another signature is “bam-boozled shakes” spiked with liquor. Such hearty highlights command a big appetite, but don’t overlook Holstein’s amazing appetizers to share or snack on instead of a full meal. Among them are Buffalo wings with blue cheese dip, or as another tempting take on the classic, a Buffalo chicken dip made with shredded chicken breast, ranch, hot sauce and bleu cheese with tortilla chips for scooping.
