Don't pass this restaurant by if you can help it! Fantastic food and staff. But do read on for some details. Although it has been open a few short weeks as a re-branded Azure, and it is trying to build its clientele, menu and drinks definition and its particular niche in the local area, it is a solid winner. Let's take the food first for the foodies among us. Don't be fooled by the relatively compact menu. There really is something in there for everyone. Subtlety abounds as different flavors are balanced perfectly by the chef. Its not just the salt and sugar based sauces as is normal in most American restaurants today. If there is a hint of honey or lavender in the dish, then you can recognize them as undertones or accents, but never overpowering. Taking some example that we tried - Mussels were unbelievably fresh but didn't taste of a harbor, delicately cooked in a sauce that had chicken and fennel sausages in it, with a touch of heat. Fabulous. Brussels sprouts, very slow roasted, allowing the flavors to explode, and with just a splash of maple somewhere there. Octopus, that I have never had before, that defied description. So good - try it. Finally a Shiitake Risotto where mushrooms and Romano cheese paired well, giving it the comfort food nature of mac 'n cheese (not the taste obviously)with some perfectly cooked risotto, (just a hint of al-dente with the rice). The cocktails were sublime and Savannah and Kim (our two hosts that night) continued to surprise us with some great mixes. By the way all of the basic components they use are home made, so for example they were reducing and infusing a sugar/honey concoction with fresh rosemary on the bar, that would be used later for drinks. Everyone was unbelievably friendly and passionate about what they do. It really can make the difference between a good evening and a great evening. So in summary if you are looking for just a quick bite, a romantic evening, or just somewhere to hang out, try Noble. More
