The characteristically lush and natural tropical surrounds and poolside setting give Chapter One that subtle energy maintaining a very rhythmic, natural atmosphere from serving to serving. On looks alone, it is easy to see why Chapter One is Port Douglas’ premier dining and only hatted restaurant. Architecturally designed in a timber and glass construction with a Balinese influence, you are immediately immersed in tranquility before taking your seat on the dark wood furniture and glancing at the menu.

The smell of deliciousness from our wood fired char-grill and smokers will get your taste buds buzzing. The height of passion and creativity runs through the delivery of each dish, with all produce and combinations being carefully thought out. Our menu has an uncompromising focus on delivering dishes driven by both produce and a combination of techniques from artisan to modern including cooking with fire, smoking, fermenting and sous vide. Everything is made from scratch. Wine and cocktail menus have also been purposely pieced together to complement the flavours being presented.
