   ITZAM is inside the stunning Etereo hotel. The restaurant is comfortable yet refined, and beautiful with ocean views from every table. The food and service were both outstanding. The dishes are Mayan inspired and our server explained the inspiration behind every dish we ordered and the emphasis on local ingredients & locally influenced dishes. We had the crudo and cochinita pibil appetizers to start, along with the complimentary sourdough achiote bread they make from scratch. The bread was warm, fresh out of the oven and was served with a pumpkin seed oil and locally farmed salt. The cochinita pibil was divine, a must order. The crudo was refreshing, unique and well balanced. We had a grilled fish for two that was also prepared with achiote that was served with freshly made salsas and handmade corn tortillas. The tortillas were served inside a dried, hollowed out pumpkin and we learned the Mayans would keep food warm this way. Beautiful and functional. We also ordered the squash blossom ravioli, which was just perfect. We had the churros for dessert which are served with a spiced chocolate foam and dulce de leche for dipping. The chef and the restaurant manager, Brenda, both came to our table which was a real treat. I love that they have a female chef - I wish they would feature her on the website. You can tell she truly cares about what she does and was quick to compliment the kitchen staff. Order a skinny spicy margarita or a mezcalita - made with fresh lime juice and no sugar, as it should be!

   The Service was excellent, the food amazing and exquisite…all staff knew the dishes and were attentive regarding my wife’s food allergy.
