Willkommen im Maa Deyo.

Unser Restaurant liegt in einer der ältesten Gaststätten von St. Pauli und steht für eine moderne Autorenküche, in der lateinamerikanische Aromen auf zeitgenössische kulinarische Ideen treffen. Das Menü umfasst vegetarische, vegane, Fisch- und Fleischgerichte sowie eigene Interpretationen von Klassikern wie Ceviche und Crudo – ausgewogen zwischen süß, sauer, mild und pikant.

Hinter der Küche steht Küchenchef und Inhaber Cristian Orellanus, ausgebildet in Chile bei Paulo Russo und Alain Guillon, mit anschließendem Masterabschluss am Basque Culinary Center. Seine Laufbahn führte ihn durch Spanien, Italien, Portugal, Frankreich, die Schweiz und Deutschland.

Wir arbeiten mit einem Sharing-Konzept für ein lebendiges Miteinander am Tisch.

Wir schenken unbehandelte Weine aus, die wir direkt von Winzerinnen beziehen. Für uns zählen das Handwerk und der persönliche Kontakt zu den Produzentinnen am allermeisten.

Dazu kuratieren wir jeden Abend eine Vinyl-Listening-Session während des Dinners. Von Jazz, Lo-Fi, Hip-Hop bis Ambient. Hier wird Musik gespielt, nicht gestreamt.
