Graham is an impressionist artist with flavours and every course is perfectly matched to a wine. Since it was a rainy October night there were only about 7 or 8 tables booked that we could see. It is about a 3-hour meal, harmoniously paced. If you are staying in Ojo Caliente or even within a 30 mile radius, treat yourself to either dinner on a Friday or Saturday, or one of two lunch seatings on a Sunday.
