One dish is based on local herring that has been smoked in house on a mousse-like cream in a pastry shell, another course was a house-made bagel with three types of different of miso and a cream all of his own creation. The flavors are unique, unexpected and absolutely delicious. Every dish was exciting, as were the local wine and cider pairings to accompany each course. All was carefully explained and beautifully served. It is a most inspiring experience that uses ingredients like tea, cucumber, spelt, garbanzo bean cream in surprising ways.
